This Green Pea Salad with Honey is a great summer salad! Crunchy and flavorful, this will make any meal pop! This serves 4-6 people.
Ingredients:
- 2 cups fresh or thawed frozen green peas
- 1/4 cup basalmic vinegar
- 2 tablespoons honey
- 2 tablespoons torn fresh mint
- 1/2 teaspoon Himalayan salt
- 1 (8oz.) bag of sugar snap peas
- 1/2 cup baby spinach leaves
- optional: can add berries or mandarin oranges for added sweetness
Fill a large bowl with ice water and set aside. Bring a medium saucepan of water to a boil over high heat. Add green peas and cook until tender (about 5 mins). Drain and place in ice water for 2 minutes to stop the cooking. Drain well. In a large bowl, whisk together vinegar, honey, mint, and salt until blended. Add green peas, sugar snap peas, and spinach. Gently toss salad until evenly coated.
